Minced meat semolina pancakes is a dish eaten in some Nigerian homes.

Procedure[edit | edit source]

  1. Combine the semovita, baking powder, and cinnamon.
  2. Combine the egg and melted butter. Mix in the milk and sugar.
  3. Stir the semovita mixture into the wet mixture until you get a smooth batter.
  4. Heat a thin layer of vegetable oil in a pan, add the onion, and fry for about a minute.
  5. Add the stock cube, garlic, suya spice, and ginger, and fry for another minute or two.
  6. Add the minced meat to the onions and cook, stirring, until cooked through. Cover and cook for about 5 minutes on low heat.
  7. Add the peppers to the meat and onions, and cook for 1 minute.
  8. Cool the meat mixture and stir into the semovita batter.
  9. Heat a thin layer of vegetable oil in a clean pan, and scoop spoonfuls of batter in to pan to make pancakes. Cook, flipping over to brown on both sides.
