The mung bean, also moong, is a small green legume particularly associated with Asian cuisine.

South Asian cuisines use mung beans both whole and split. When split and skinless, the bean is often referred to as moong dal.

Mung bean sprouts

Mung beans can be sprouted into bean sprouts. They can also be refined into mung bean flour/starch. This starch can be used to make a type of vermicelli called bean threads. with both being used commonly in South-East Asian cuisines.
