These microwave lemon puddings are adapted from a recipe in page 98 of April 2023 edition of Tesco's magazine.

  1. Grease 4 ea. 150 ml (5.1 US fl oz) microwave-safe ramekins.
  2. Mix together the lemon curd and water in a bowl.
  3. Spoon the mixture into the ramekins.
  4. Beat the margarine and sugar together in another bowl.
  5. Beat in the egg and lemon zest.
  6. Fold in the flour, then mix in the lemon juice.
  7. Divide the mixture between ramekins and smooth the tops.
  8. Put the ramekins on a plate and microwave for 4 minutes. Let stand 1 minute.
  9. Dust the puddings with powdered sugar and serve, optionally, with raspberries and crème fraîche.
