Potato fufu is a type of Nigerian swallow made from Irish potatoes. It is similar to amala, eba, garri, and iyan.

Procedure[edit | edit source]

  1. Use a blender to purée the potato and oats with enough water to make a paste.
  2. Transfer the paste into a pot. Cook, stirring, until it forms a thick, lump-free dough.
  3. Add a few drops of water, cover, and cook until it is well-steamed.
  4. Stir, and serve with Nigerian soups.
