Nigerian vegetable and fish stew is a very nutritious stew; it is one of the simplest stew recipes but is packed with flavor. In addition to yam and rice, it also goes well with other staple foods. Without sacrificing its nutritive value or rich depth of taste, this stew can be altered to please both vegans and meat lovers. Any green vegetable would work in this vegetable stew. You can also add ugu or fragrant leaves like basil.

- Tomato
- Peppers
- Vegetable oil
- Fish
- Garlic, minced
- Diced onion
- Ground crayfish
- Stock cube
- Salt
- Amaranth leaves, chopped
Equipment[edit | edit source]
- Pot
- Bowl
- Chopping board
- Knife
- Blender
Procedure[edit | edit source]
- Purée the tomato and pepper together using the blender, and keep aside.
- Add just enough oil to a skillet over medium heat to allow the fish to fry. Add the fish, and fry until golden. Remove the fish and set aside.
- If there is too much oil in the pan, reduce it, then add the minced garlic and chopped onions. Cook until transparent.
- Add the puréed tomato mixture and continue to cook while stirring occasionally.
- Season with crayfish, stock cubes, and salt to taste. Stir, and leave to cook for a short while.
- Add the amaranth, and stir well.
- Stir in the fried fish back in. Check the seasoning for salt and make any necessary adjustments.
- Remove it from the heat, and serve it with steaming rice or your favorite swallow.
