Nigerian masa or waina is a Hausa leavened pancake typically made with rice or corn, not to be confused with the Latin American masa made from nixtamalized corn. The recipes vary across households, but it is traditionally made in an oval shape. It can be made in a flat skillet or in a specialized masa pan.
