Nigerian coconut rice is prepared by soaking white rice in coconut milk or cooking it with coconut flakes.

Procedure[edit | edit source]

  1. Heat the coconut oil in a pot. Add the sliced onion, and fry until it loses color.
  2. Add the curry powder, chopped tomatoes, pepper, salt, tatashe, crayfish, stock cube, and sweet pepper. Stir, and cook for 5 minutes.
  3. Stir in the coconut milk and rice. Cook for about 45 minutes, until the rice is tender.
  4. Serve with either roasted chicken, fried fish, or beef.
