Anise Syrup (حبة حلاوة, Habet Hlawa) is an Algerian drink.


  • 1 cup of anise seeds
  • 12dl of water
  • Sugar cubes


  1. Pour water into a saucepan, add in the sorted anise seeds and bring to a boil on medium heat.
  2. Turn off the heat and leave to infuse covered for 30 minutes.
  3. Filter.
  4. Add the sugar as desired and bring to boil on medium heat again while monitoring until the syrup drips into a thin stream.
  5. Filter a second time.
  6. Let it cool and bottle. Serve with sparkling or still water according to preference but very cold.
