Ofada rice is a type of rice grown locally in Nigeria. This recipe uses the rice to cook fried rice.

Procedure[edit | edit source]

  1. Rinse the rice very well with salt and warm water until the water you are using to rinse is clear.
  2. Boil the rice and some chopped onions in water for 15 minutes until it the rice is about half-cooked.
  3. Drain the rice and onions in a sieve.
  4. Heat some groundnut oil in a pot, and add some chopped onion. Stir well for a minute or two, then add the carrots, bell pepper, green beans, and spring onions.
  5. Add the prawns, cinnamon, and nutmeg. Stir fry for a few minutes.
  6. Add a little water, then the curry powder and thyme. Bring to a boil, and add the rice and sausages.
  7. Cover the pot and cook until the rice has absorbed the liquid.
