Rice and beans jollof is a typical Nigerian food made from rice and beans. It is served with beef, chicken or moin moin.
Ingredients

- 2 fresh chiles
- 5 medium tomatoes
- 1 medium onion, chopped
- 2 tablespoons vegetable oil or palm oil
- 1 stock cube
- 1 teaspoon salt or to taste
- 2 cups parboiled rice

[edit | edit source]- Rinse the beans, and boil in water until tender. Drain the cooked beans.
- Grind together the chiles, tomatoes, and onions to make a purée.
- Heat a thin layer of oil in a pan, and add the purée. Season with stock cube and salt, and simmer for 3 minutes.
- Stir in the parboiled rice and beans, and cook for 5 minutes.
- Serve with beef, chicken, or moin-moin.
