Rice pudding is a thick pudding of sweetened rice, usually cooked with milk. It can be prepared in a variety of ways, including boiling or baking. It's similar to Nigerian custard, pap, and oatmeal recipes.

Procedure[edit | edit source]

  1. Bring a pot of water to a boil. Stir in the rice, and boil for 5 minutes.
  2. Drain the rice, and rinse with water to remove excess starch.
  3. Bring milk and a pinch of salt to a boil. Stir in the rice, and reduce the heat to low. Simmer for 20 minutes, or until the rice is soft.
  4. Reduce the heat to low, and stir the rice continuously until it has thickened and become creamy. Make sure to prevent the rice from sticking to the bottom of the pan and burning.
  5. Combine the egg and sugar in a boil, then quickly stir the mixture into the rice pudding.
  6. Remove from the heat, and let cool.
  7. Season with a pinch of cinnamon, and serve.
