Efo igbo soup is a native Nigerian (specifically Yoruba) soup made of white eggplant leaves.

Procedure[edit | edit source]

  1. Wash and boil the meat.
  2. Wash the efo igbo with with salt to remove the bitter taste.
  3. Blend together the peppers, onions, and tomatoes to make a paste.
  4. Heat a thin layer of oil in a pot. Add the pepper paste, a lot of iru, and salt. Let boil for about 12 minutes.
  5. Add your the boiled meat, fish, and ground crayfish. Boil for another 7 minutes.
  6. Add the efo igbo leaves, and allow then to steam for 2 minutes.
  7. Remove from the heat, and serve with rice or a swallow.
