Lamington is a dessert of sponge cake (or more traditionally, butter cake), cut into squares, coated in a layer of chocolate or strawberry icing, and topped with coconut.
Ingredients[edit | edit source]
- Sponge cake
- Chocolate icing
- Dessicated coconut
Procedure[edit | edit source]
- Cut the sponge cake into your desired shapes (commonly 5–7 cm cubes).
- Prepare a flat tray with an even layer of desiccated coconut shavings
- Dip the sponge cake cubes into chocolate icing.
- Immediately dip the coated cake into the coconut, or sprinkle the coconut on top.
- Put aside to dry and set.
