Ensalada Rusa, which translates into "Russian Salad" is a simple potato salad that is a staple in Uruguayan tables. It is served with "asado" in restaurants.
- 2 large potatoes diced
- 1 cup of fresh peas
- 2 carrots diced
- 1/2 to 3/4 cup of mayonnaise
- Salt and pepper to taste
- Cook all vegetables separately until tender, but not too soft.
- Allow to cool completely.
- Dress with mayonnaise and salt and pepper.
- Serve as a side dish.
Please note that the mayonnaise used for this dish is not sweet, so choose either "Hellmans" or "Best Foods" mayonnaise which is savoury.
