Ingredients

- 4 eggs, separated
- Salt to taste
- Pepper to taste
- 1 tablespoon milk
- 4 oz finely-grated cheese
Procedure
[edit | edit source]- Grease a shallow baking dish with butter. Add the egg yolks.
- Mix in the salt, pepper, milk, and a little of the grated cheese.
- Whip the egg whites to a stiff froth, and lightly fold in the remaining cheese.
- Pile the egg white mixture on top of the egg yolks.
- Bake the whole dish in a moderate oven.
