Calabash noodle soup (Chinese: 葫蘆麵 or 葫子麵) is a Chinese dish composed of cooked calabash, shredded meat, noodles, and soup.

Procedure[edit | edit source]

  1. Peel the calabash and cut into finger-sized strips.
  2. Cut the pork tenderloin meat into thin strips.
  3. Marinate the meat with corn starch, soy sauce, and sugar.
  4. In a wok, stir-fry the meat until it is slightly brown. Remove the meat from the wok.
  5. In the wok, stir-fry the calabash strips and garlic for a couple of minutes.
  6. Place the meat back into the wok and add soup stock, soy sauce, and water.
  7. Simmer for a couple of minutes until the calabash strips look tender.
  8. Crack the eggs and pour the white and the yolk into the soup.
  9. Serve the soup with noodles.
