Miyan shuwaka is a bitterleaf soup eaten in the northern part of Nigeria.
Ingredients[edit | edit source]
- Meat
- Bitter leaf (fresh or dried)
- Onion, chopped
- Ground fresh red chile pepper
- Ground tomatoes
- Palm oil
- Fermented locust beans (daddawa)
Procedure[edit | edit source]
- Boil the meat in a pot of water for a few minutes.
- If using fresh bitter leaf, wash with salt and squeeze to reduce the bitterness.
- Fry the onion, pepper, and tomatoes in a pot of oil for 5 minutes.
- Combine the fried mixture and meat in a pot with the bitter leaf. Add enough water to cover.
- Add the daddawa, stir the soup well, and cook for 3 more minutes over low heat. Season with salt to taste.
