Footi can be best described as a flavorful stew abundant in aubergines and tomatoes. It closely resembles a chili and could be alternatively referred to as "Chilli con Berenjena." This recipe is entirely plant-based, emphasizing a generous amount of vegetables while incorporating beans for a natural protein boost. Traditionally, this delectable dish is served by pouring it over rice. However, you can also enjoy it alongside a Guinean swallow called fufu.

  1. Heat some oil in a large pot over medium heat. Add the onions and chiles, and sauté for a few minutes.
  2. Add the aubergines and okra. Cook for a few more minutes, stirring occasionally.
  3. Add the remaining ingredients, and simmer until the aubergines are soft and thoroughly cooked, which should take approximately 30–40 minutes.
  4. Serve over wholegrain rice.
