Coddle is a popular meal in Dublin. It's seen as an economical dish and can be stored in fridge and reheated in microwave. It goes well with soda bread or brown bread.

  1. Completely submerge bacon, onions, and sausages in broth, then boil for about 5 minutes.
  2. Add the potatoes, cutting into bite-sized pieces if necessary, then add the rest of the stock.
  3. Return to the boil and simmer for about 1 hour, or until the potatoes have started to disintegrate, thickening the broth.
  4. Add salt and pepper to serve.
