This is a simple fried rice made with canned tuna and vegetables, seasoned with honey miso sauce.

Ingredients[edit]

  • 1 cup basmati rice, prepared as a firm and dry pilav
  • 1 can good quality tuna
  • 2 eggs
  • 1 medium red onion, finely chopped
  • A handful of Bean sprouts
  • 1/2 cup or more shredded cabbage
  • Red pepper paste
  • Hot paprika
  • Salt, if needed
  • Chopped scallions
  • Olive oil
  • Katsuobushi (for garnish)

For honey miso sauce:

  • 1 tbsp Miso
  • 1/2-3/4 of a tbsp honey (this depends on preference)
  • Tabasco to taste

Procedure[edit]

  1. Prepare a pilav style rice. This should be dry with little fat or excess moisture.
  2. Saute the onion in 1 tbsp olive oil
  3. Add the cabbage and bean sprouts
  4. Stir in red pepper paste and paprika.
  5. Add the cooked rice
  6. Add the miso and honey mixture and combine thoroughly
  7. Add Tabasco if desired
  8. Mix in the tuna
  9. Move the rice to one side of the skillet and crack two eggs
  10. When they are ready mix the scrambled eggs in with the rice
  11. Garnish with katsuobushi and scallions before serving
