Tomato powder can be used to enhance and thicken homemade stews and soups in place of fresh tomatoes. Simply add a bit at a time, tasting as you go, and adding a little more until you get the desired consistency and flavor. Tomato powder will give the stew a rich ruby color and a distinct flavor after cooking.

  1. Rinse the chicken, and season it with thyme, ginger, onions, cayenne pepper, and salt. Place it in a saucepan with water, and boil until cooked. Remove the chicken from the broth, reserving both the broth and the chicken.
  2. Heat a pot over medium heat, then add a couple of cooking spoons of vegetable oil. Add the chicken, and fry for a few minutes until golden.
  3. Remove any excess oil from the pot once the chicken has been browned and add the chopped onions and minced garlic. Cook until fragrant.
  4. Add the reserved broth and bay leaves to the same pot, season with curry powder, thyme, and stock cube, and bring the contents to a simmer.
  5. Stir in the tomato powder until it is completely dissolved. It will thicken quickly, so adjust the heat to medium-low if it begins to splatter. To modify the consistency, add a splash of water or extra chicken broth. Cook the stew for 15 minutes, or until all of the ingredients are well combined.
  6. Adjust the salt and any other seasonings, as well as the liquid, as necessary. Remove the stew from the heat and serve immediately.
