Tomato powder can be used to enhance and thicken homemade stews and soups in place of fresh tomatoes. Simply add a bit at a time, tasting as you go, and adding a little more until you get the desired consistency and flavor. Tomato powder will give the stew a rich ruby color and a distinct flavor after cooking.

- Chicken pieces
- Thyme
- Ginger
- Onion
- Cayenne pepper
- Salt
- Vegetable oil
- Onion, chopped
- Garlic, minced
- 2 bay leaves
- Curry powder
- Seasoning cubes
- Tomato powder
Procedure[edit | edit source]
- Rinse the chicken, and season it with thyme, ginger, onions, cayenne pepper, and salt. Place it in a saucepan with water, and boil until cooked. Remove the chicken from the broth, reserving both the broth and the chicken.
- Heat a pot over medium heat, then add a couple of cooking spoons of vegetable oil. Add the chicken, and fry for a few minutes until golden.
- Remove any excess oil from the pot once the chicken has been browned and add the chopped onions and minced garlic. Cook until fragrant.
- Add the reserved broth and bay leaves to the same pot, season with curry powder, thyme, and stock cube, and bring the contents to a simmer.
- Stir in the tomato powder until it is completely dissolved. It will thicken quickly, so adjust the heat to medium-low if it begins to splatter. To modify the consistency, add a splash of water or extra chicken broth. Cook the stew for 15 minutes, or until all of the ingredients are well combined.
- Adjust the salt and any other seasonings, as well as the liquid, as necessary. Remove the stew from the heat and serve immediately.
