Tiger nut fufu is a typical Nigerian swallow prepared from tiger nut meal/flour. Semolina and xanthan gum are both binders required to make it thick and moldable.

Procedure[edit | edit source]

  1. Bring a pot of water to a boil.
  2. Combine the tiger nut flour, xanthan gum, and semolina. Gradually whisk this mixture into the boiling water.
  3. Cook, stirring, until thickened and cooked.
  4. Serve hot.
