Plantain and egg frittata is one of the best breakfast options in West Africa, especially in Nigeria. It is suitable for both children and adults and makes a great meal to prepare ahead of time. It is sometimes called "Nigerian pizza" since it turns out just like it.

Procedure[edit | edit source]

  1. Peel the plantain and cut into pieces of your desired shape and size.
  2. Pan fry the plantains in hot oil until golden brown, then remove from the oil and set aside.
  3. Heat a few tablespoons of oil in a skillet, and add the onions and garlic. Sauté for 1 minute.
  4. Season the onions with salt, stock cube, pepper, thyme, and curry powder. Remove from the heat, and cool slightly.
  5. Beat the eggs, and mix in onions.
  6. Heat a skillet, and grease with oil or melted butter. Evenly pour in the egg mixture, then scatter the plantain and pepper strips over top.
  7. Cover the pan, and cook on low heat for 20 minutes, or until the mixture starts to set and cake nicely.
  8. Once it has dried, turn off the heat. Serve hot.
