Ingredients[edit | edit source]
- ¼ cup tomato sauce
- Salt, pepper, and other seasonings to taste. See tips below
- Cooking spray
- 2 eggs
- 2 tablespoons chopped green bell peppers
- 2 tablespoons chopped mushrooms
- ¼ cup shredded mozzarella cheese
Procedure[edit | edit source]
- Mix spices and tomato sauce and allow to meld flavors while preparing the rest of the recipe.
- Beat eggs well.
- Heat a small skillet over low heat, sprayed with cooking spray.
- Pour beaten eggs into skillet.
- Cover skillet.
- Cook for 3 minutes. Eggs should be almost set.
- Carefully flip omelet over.
- Cook another minute.
- Combine mushrooms and peppers and cook 30 seconds in microwave oven.
- Spread tomato-spice mix over omelet.
- Sprinkle cheese over tomato sauce.
- Top cheese with hot mushrooms and peppers.
- Cover skillet.
- Cook another 2 minutes. Cheese should be melted.
