Onunu with fish stew is a traditional Nigerian meal consisting of pounded yam and plantains (onunu) served with a spicy fish stew. It is eaten among the people of Ijaw and Kalabari in Nigeria.

Onunu[edit | edit source]

  1. Peel and rinse the yams, then cut into small cubes. Do the same for the plantains.
  2. Transfer the yam to a pot, cover with water, and bring to a boil over medium heat.
  3. Boil the yam until tender, then add the plantains. Cook until both are soft.
  4. Drain the yam and plantains, then pound them together. Season with salt, add a small amount of palm oil, and pound well until combined.
  5. Mold the onunu into small balls.

Fish stew[edit | edit source]

  1. Season the fresh fish with a little dry pepper and stock cube. Marinate for about 23 minutes.
  2. Steam the fish with a little water for about 7 minutes on low heat.
  3. Heat a thin layer of palm oil in a pot. Add the onions, and fry until light brown.
  4. Grind the tomato and fresh pepper to a purée, and stir into the onions. Cook for about 7 minutes.
  5. Stir in the seasonings and a bit of water. Cook for a minute or two.
  6. Add the fish and curry leaf, and allow everything to heat through.
  7. Serve hot with the prepared onunu.
