Ukwa, or breadfruit, is a versatile food in the eastern part of Nigeria, as seen in this ukwa with corn porridge.
Ingredients[edit | edit source]
- African breadfruit seed (ukwa)
- Potash (kaun)
- Palm oil
- Maize, boiled
- Stock cube
- Scotch bonnet chili pepper, grated
- Onion, grated
- Salt
Procedure[edit | edit source]
- Wash the ukwa well with clean water.
- Bring a pot of water to a boil, and add a pinch of potash. Add the ukwa, and simmer until soft. Drain the water.
- Heat a small amount of water and palm oil in a pan. Add the cooked ukwa, maize, stock cube, grated pepper and onion, and salt.
- Simmer the mixture until well-cooked and thickened like a porridge.
- Remove from the heat, and serve warm.
