Ukwa, or breadfruit, is a versatile food in the eastern part of Nigeria, as seen in this ukwa with corn porridge.

Procedure[edit | edit source]

  1. Wash the ukwa well with clean water.
  2. Bring a pot of water to a boil, and add a pinch of potash. Add the ukwa, and simmer until soft. Drain the water.
  3. Heat a small amount of water and palm oil in a pan. Add the cooked ukwa, maize, stock cube, grated pepper and onion, and salt.
  4. Simmer the mixture until well-cooked and thickened like a porridge.
  5. Remove from the heat, and serve warm.
