Sultan chips are a northern Nigerian delicacy made by cooking fried potatoes with vegetables.

  1. Cut the potatoes into batons the shape and size of chips (french fries).
  2. Deep fry the potato batons until cooked through.
  3. Boil the diced carrot and peas in salted water until tender. Drain and reserve.
  4. Heat a thin layer of vegetable oil in a pan over medium heat. Add the onion and stir until golden brown.
  5. Add the fried potatoes, and stir for a few seconds.
  6. Beat the egg with stock cube and a pinch of salt. Add to the potatoes in the pan, and stir.
  7. Add the minced meat and blended pepper. Stir for a while.
  8. Stir in the carrot, green beans, peas, and cucumber. Cook for a few minutes, then remove from the heat.
  9. Serve hot with fruit juice.
