Mpoto mpoto is a Ghanaian dish made from cocoyam or yam. It is also known as yam pottage. It is made from several ingredients including fish and onion.

  1. Peel and wash the cocoyam or yam, then cut into small chunks.
  2. Place yam in a pot with the onion, tomatoes, and pepper. Cover with water and boil for 25–35 minutes.
  3. Add dried herring and fish to the pot. Cook until tender.
  4. Remove the cooked tomatoes, pepper, and onions. Grind to a paste.
  5. Stir the tomato-pepper paste back into the cooked yam, and cook for a few minutes.
  6. Add palm oil and salt to taste. Reduce heat, and cook for a little while, stirring intermittently.
