Procedure[edit | edit source]

  1. Boil the potatoes until tender, then drain.
  2. While hot, rub the potatoes through a colander into a clean pan.
  3. For every pound of potatoes, mix in ½ ounce butter and 1 tablespoon milk; do not make them too moist.
  4. Serve hot.

  • Onion mashed potatoes: Prepare some boiled onions, rub them through a sieve, and mix them with potatoes.
