- 1 cucumber, chopped in 1 cm cubes
- 1 tomato, chopped in 1 cm cubes
- 1 onion, chopped in 1 cm cubes
- ¼ cup chopped parsley
- 2 T oil
- 2 T lemon juice (may use vinegar instead)
- ½ t salt
- ½ t freshly ground black pepper
- 1 t za'atar (can substitute ¼ t thyme)
Procedure[edit | edit source]
- Mix cucumber, tomato, onion, and parsley.
- Mix oil, lemon juice, salt, pepper, and za'atar.
- Pour over vegetables. Correct seasoning, to taste.
