Procedure

[edit | edit source]
  1. Clean and wash grapes well, removing stalks and any debris.
  2. Crush the grapes until you get a good purple colour.
  3. Place the crushed grapes in a ceramic jar, and mix with 2 kg sugar. Mix in the water, egg whites, yeast, and wheat until well-combined.
  4. Cover with an airtight lid, and let ferment in a cool place for 21 days, stirring well every other day.
  5. Strain the mixture and discard the solids.
  6. Stir the remaining sugar into the liquid, and place back in the fermenting container. Mix well, and keep airtight for another 21 days to ferment.
  7. Filter the wine using a muslin cloth.
  8. Place the sugar for colouring in a heavy bottomed pot over medium heat. Stir until the sugar melts and becomes a dark brown caramel—do not let it burn.
  9. Remove the caramel from the heat, and gradually and carefully stir in 5–7 Tbsp hot water. Let cool slightly.
  10. Stir the caramel syrup into the wine, then transfer the wine into a jar for storage.
