Groundnut butter soup is a common food in West Africa but is most eaten by Ghanaians

  1. Combine peanut butter and water in a Dutch oven or saucepan. Stir until a thick but slightly runny paste forms.
  2. Heat the peanut butter mixture over high heat. When the quantity is reduced and oil begins to form on top, turn the heat to medium and stir. Make sure to stir it regularly to avoid it from getting fried at the bottom of the pan.
  3. Stir until a smooth texture develops. Remove from heat and let it cool for a while.
  4. Put chopped ginger, chili pepper, onion, and garlic cloves in a blender. Blend until a smooth texture develops.
  5. Clean, then cut your chicken or beef into the appropriate pieces. Use salt and stock cube to season meat.
  6. Combine the meat with the blended ingredients, a chopped onion, bay leaves, and fresh tomatoes in a Dutch oven or saucepan. Toss everything together to coat the meat well.
  7. Place pot over high heat, cover, and cook for approximately 10 minutes. Turn heat to low, and cook for about 15 minutes, or until onion and tomatoes are soft and tender.
  8. Blend the tomato paste and onion until smooth. Pour over the meat, then boil for about five minutes. Add the dry fish.
  9. Thin the cooked peanut butter paste with a small amount of water. Blend until well-combined.
  10. Pour peanut butter mixture over meat, and cook for about 25 minutes, or until chicken is cooked through and oil has risen to the top of the soup. Discard bay leaves.
  11. Serve hot with white rice or fufu.

  • You can serve groundnut soup with rice balls (omu tuo), fufu, ampesi, akple, plain rice, pounded yam, or plain rice.
