  1. Place the bacon hock in a pot of water. Add green food color, following the manufacturer's guidelines.
  2. Bring to the boil and simmer for 60–90 minutes.
  3. Remove the hock and let it cool slightly.
  4. Carefully remove the skin leaving the fat layer intact.
  5. If the hock is the desired shade of green, place on an platter. If not, return to pot and add color until the right shade is reached. Transfer hock to platter.
  6. Separate eggs into whites and yolks.
  7. Poach the egg yolks in water with blue food coloring.
  8. Poach the egg whites in uncolored water.
  9. Place the egg whites on platter with hock, and place the yolks on the whites.
  10. Serve using a tri-pronged fork.
