- 1 cup (250 milliliters (8.5 US fl oz)) vegetable oil
- 2 eggs
- 4 cups (900 grams (2.0 lb)) superfine sugar
- 4 cups (1 kilogram (2.2 lb)) pumpkin puree
- 5 cups (650 grams (1.4 lb)) plain flour
- 1 tsp cinnamon
- ½ tsp nutmeg
- 4 tsp bicarbonate of soda
- 1 tsp cloves
- 2 cups (150 grams (5.3 oz)) pecans or almonds, chopped
- 1 cup (100 grams (3.5 oz)) granola, rolled oats or Grape-Nuts
- 4 cups (340 grams (12 oz)) Chocolate chips
Procedure[edit | edit source]
- Preheat oven to 375 °F (191 °C).
- In a large bowl, combine and wet ingredients.
- Sift flour, cinnamon, nutmeg, soda, and cloves together in a separate bowl.
- Blend into wet ingredients.
- Mix in nuts, granola, and chocolate chips
- Drop spoonfuls of dough onto greased cookie sheet
- Bake for 10-12 mins.
