Cilantro is the leafy part of the coriander plant. It has a very different, much more fresh, taste than coriander seed. Cilantro is an important ingredient in Asian cuisine and in Mexican Salsas. It is typically purchased fresh, in a bundle, in a manner similar to fresh parsley.
