Wali wa Junde na karot is a Tanzanian rice dish with peas and carrots. It is popular in Tanzania and East Africa in general. It can be served with curries, stews, and any kind of light meal.

Procedure[edit | edit source]

  1. Heat the olive oil in a pot over medium heat.
  2. Add the rice, carrots, peas, turmeric, and salt to the pot. Stir for a few minutes.
  3. Combine the coconut milk and some hot water. Pour a little bit into the pot, and bring to a boil.
  4. Simmer until the rice is cooked, stirring in more diluted coconut milk as needed until the rice has absorbed everything.
  5. Fluff with a fork, and serve hot.
