Unripe plantain porridge is a Nigerian dish of unripe plantain and vegetables. It is dominantly consumed by the Igbo people of Nigeria.

Procedure[edit | edit source]

  1. Gently combine the sliced plantains, seasoning cubes, fish, ground crayfish, and pepper in a pot. Avoid mashing the plantains.
  2. Fill the pot with water to the same level as the contents. Bring to a boil without stirring.
  3. Add the salt and palm oil. Simmer until everything is done and the plantain is tender.
  4. Add the ugwu leaves, cover, and set aside to cook.
  5. Remove from heat, and let rest a few minutes before serving.
