Succotash - A recipe with a great name.

- 2 quarts shelled Lima beans
- 24 ears of corn cut off the cob
- 1 pound of pickled pork
- 2 tablespoons sugar
- 2 tablespoons butter
- pepper

Cover pork with water, and parboil it; add beans cooked until they burst; then add corn, sugar, butter, and pepper to taste. After corn is added, watch carefully to keep from scorching.

The pork is commonly omitted for a vegetarian side-dish.
In some recipes, a red bell pepper (chopped) is added.
One variation which is similar to glottucks is to add 1/2 cup dried sea kelp, chopped. In the vegetarian variation, the kelp is sauted in butter first, and then the remaining ingredients are added.
