Shuku shuku is a very delicious Nigerian snack.

Ingredients[edit | edit source]

Procedure[edit | edit source]

  1. In a large bowl, combine the sugar, egg yolks, and coconut chaff. With a spatula, mix everything thoroughly until it is all combined.
  2. Make little shuku shuku balls using your fingertips. They should be about the size of table tennis balls.
  3. Roll each ball gently in breadcrumbs until it is thoroughly covered. Transfer to a baking sheet.
  4. Bake in a preheated oven at 170°C (335°F) for 20–30 minutes, until golden all over.

Notes, tips, and variations[edit | edit source]

  • Coconut chaff is the solid material left over after blending coconut flesh and straining out the liquid.
