Pumpkin purée is a cooked and mashed mixture of a variety of edible pumpkins and, occasionally, other winter squash. Dickinson pumpkins are a common choice for pumpkin purée due to their sweetness and lower water content. Pumpkin purée can be store-bought, often in canned form, where it should not be confused with canned pumpkin pie filling. It can also be homemade by cooking pumpkin and processing it into a smooth paste. It should be noted that different brands and different methods of making pumpkin purée will have different water content—for consistency in a recipe, be sure to use the specified brand or method.
