Plantain pudding with grilled fish and sauce

Plantain pudding is a Nigerian steamed savory pudding. It is prepared similarly to moin moin but using unripe plantain instead of beans.

Procedure[edit | edit source]

  1. Blend the plantain pieces until smooth.
  2. Blend in the pepper and tomatoes until smooth.
  3. Stir in salt, seasoning cubes, and ground crayfish to taste.
  4. Stir in 2 tablespoons of vegetable oil.
  5. Transfer the batter into a greased mold, such as a small bowl or tin.
  6. Heat a small amount of water in a large pot.
  7. Place the filled mold in the pot, cover, and let steam for several minutes.
  8. Unmold the cooked pudding, and serve alone or with pap, sauce, or grilled fish.
