Stockfish pepper soup is a dish popular among the Igbo people of Nigeria. It is also called ofe okproko in Igbo and can be served with white rice, agidi, boiled yam, or any type of Nigerian swallow.
Ingredients[edit | edit source]
- Stock fish
- Salt
- Palm oil
- Onion
- Stock cube
- Tomato
- Fresh pepper
- Uziza seed powder
- Utazi leaves (scent leaves)

Procedure[edit | edit source]
- Wash the stock fish, place in a pot, and add add enough water to cover the fish. Season with salt and pepper, cover, and allow it to cook until the stockfish is soft. Set aside.
- Heat a thin layer of palm oil in a pot. Add the onion, and stir until the onion is soft.
- Add the tomato and fresh pepper, then fry them for few seconds.
- Add the stockfish to the tomatoes and pepper. Add some water, bring it to a boil, and cook for 5 minutes. Salt to taste.
- Add the uziza seeds and shredded utazi leaves, cover, and cook for another 5 minutes.
- Serve with agidi, boiled yam, white rice, or any swallow of choice.
