A Nigerian sausage roll is a savory pastry of seasoned sausage meat enclosed in a soft dough. It is particularly popular in countries with British influence, such as Nigeria.

  1. Crumble the sausages with your fingers. Mix in the nutmeg, seasoning cubes, and any additional desired seasonings.
  2. If you want a smooth filling, blend the mixture to a smooth paste using a hand blender.
  3. Set aside.

  1. Sift the flour, baking powder, and salt into a large mixing basin. Mix well.
  2. Cut the margarine into small pieces, and add to the flour mixture.
  3. Massage the margarine into the flour with your fingertips until the mixture resembles crumbs.
  4. Mix in small amounts of cold water until a stiff dough ball forms. This can be accomplished with only a modest amount of water.
  5. Cover and rest the dough for 10 minutes. Knead until smooth.

  1. Preheat the oven to 180°C (350°F). Grease the insides of an oven tray, dust it with flour, and pour out any excess flour. This prevents the rolls from sticking to the pan.
  2. Break the egg, beat it, and set it aside.
  3. Roll the dough out to a thickness of 3mm. Use a knife to trim the edges of the dough so it is shaped like a large rectangle. Remove any excess dough.
  4. Brush the dough rectangle with a thin layer of beaten egg.
  5. Scoop the sausage filling onto the dough, and shape it into a log along one of the rectangle's longer edges. The sausage should be thick enough that you can comfortably fold the dough and still have some overlap.
  6. Fold the dough in half like a mat. Place the folded roll on the excess dough to form a seal, similar to an envelope flap.
  7. Cut the log into smaller sausage rolls of your desired length.
  8. Roll out extra dough, cut, fill, fold, and cut into desired lengths.
  9. Transfer the cut sausage rolls to the prepared tray.
  10. Brush the sausage rolls with some beaten egg.
  11. Bake the rolls in the preheated oven until golden brown. Depending on the thickness of your dough and the type/heating capacity of your oven, this should take 30–40 minutes.
  12. Serve the rolls hot.
