Nigerian cauliflower fufu is swallow made with cauliflower, which is rich in fibre. Cauliflower fufu is similar to pounded yam, just like eggplant fufu is similar to amala.

Procedure[edit | edit source]

  1. Cut cauliflower into small pieces, and blend with a blender to give a purée.
  2. Strain the cauliflower mixture through a cloth, retaining the solids.
  3. Squeeze the sieve cloth to drain more water until relatively dry and a dough is formed.
  4. Transfer the dough to a saucepan over medium heat, and stir in the psyllium husk.
  5. Stir and mold to form a paste, and shape into portions.
