Melktert is a dessert with a flaky crust topped with cinnamon made from milk commonly taken amongst south African residents.

Ingredients[edit | edit source]

for the crust;

  • cold butter
  • 1/3 cup of sugar

for the custard;

  • Milk
  • Corn starch
  • Cinnamon
  • Sugar
  • Egg
  • Pastry crust

Equipment[edit | edit source]

  • Bowl
  • Parchment paper

Procedures[edit | edit source]

  1. for the crust, chop butter into cubes in a bowl, Add egg and sugar in the same bowl mixing thoroughly.
  2. Add flour to the mixture to give a dough and place in a tart mold
  3. Refrigerate dough for 10 minutes and bake in a preheated oven until golden brown
  4. For the custard,Add eggs,sugar , milk and flour in a saucepan. whisk to give a smooth blend.
  5. Cook in a low heat and Add butter until it thickens.
  6. Pour the custard into the baked crust and sprinkle cinnamon on top of it.

Notes, Tips and Variation[edit | edit source]

  • Melktert differs from Chinese egg tart in that it requires a higher ratio of milk to eggs which gives it a stronger milk flavour.
  • The custard can be baked in the crust or prepare ahead and place in the crust afterward.
