Limes are sour green citrus fruit. Limes may be substituted for lemons, and lime juice for lemon juice. The outermost surface contains flavorful oils that may be scraped off with a zester, serrated knife, or grater. As with other citrus fruit, slices are often used to decorate drinks. They generally have a hint of bitterness in contrast to lemons. They are a mainstay in Mexican and Carribbean cuisine.

The common Persian lime or Tahitian lime is a relatively small and thin-skinned citrus fruit. The Bearss variety, a type of Tahitian lime, is seedless and a bit smaller than the Persian variety. The Key lime, also known as the Mexican lime or bartender's lime, is much smaller and has an even thinner skin.
