La boule is a traditional Chadian dish made from ground millet. It is a staple food in Chad, providing nourishment and sustenance to the local population. La boule is typically formed into a ball-shaped serving and is often enjoyed with sauces or stews.

Ingredients[edit | edit source]

Equipment[edit | edit source]

Procedure[edit | edit source]

  1. In a mixing bowl, combine the millet flour and a pinch of salt. Mix them together to distribute the salt evenly.
  2. Gradually add water to the millet flour while stirring with a wooden spoon or spatula. Continue adding water until a thick, smooth batter is formed. The consistency should be similar to a pancake batter.
  3. Let the batter rest for about 30 minutes. This allows the millet flour to hydrate and absorb the water.
  4. Meanwhile, prepare the steamer or large pot with a steaming basket. Add water to the pot, ensuring that it doesn't touch the bottom of the steamer or basket. If desired, you can line the steaming basket with a cloth or cheesecloth to help prevent sticking. This step is optional but can make it easier to remove the cooked la boule.
  5. After the resting period, give the batter a final stir. It should be a pourable consistency, but not too thin.
  6. Pour the batter into the steaming basket, spreading it evenly to form a layer about 1 inch thick.
  7. Place the steamer or basket over the pot of simmering water. Cover the pot with a lid to trap the steam.
  8. Steam the la boule for approximately 30–40 minutes, or until it becomes firm and cooked through. The exact cooking time may vary depending on the thickness of the la boule.
  9. Once cooked, carefully remove the steaming basket from the pot and let the La Boule cool slightly.
  10. To serve, shape the la boule into a ball or any desired shape using your hands. It should hold its shape easily due to the cooked millet flour.
  11. Serve on its own or accompanied by various sauces or stews, such as peanut sauce, tomato-based stews, or vegetable soups.
