This is a cookbook for the islands of Chuuk State in the Federated States of Micronesia. This page has been started by the Chuuk High School Media Studies program conducted by SHIP/HOOPS and supported by Learning Currents International, LLC. Any recipes related to Chuuk are welcome and will be reviewed for possible editing by the Chuuk High School students.
[edit] Traditional Fish Cooking
Fish are prepared in many traditional ways: boiled in water, cooked in coconut creme, fried, or grilled. Large fish are usually cut into smaller pieces. Smaller fish can be cooked whole.
To cook a fish in coconut creme:
- Place fish in just enough coconut creme to keep the fish from burning. The less liquid used the more flavor there will be in the fish and the more food value will be kept.
- Simmer slowly so the fish will not break up.
- Use the cooking liquid as soup or serve it with the fish. It can be used instead of water for boiling vegetables.
