This recipe for spiced oysters has been adapted and modernized from the 1881 Household Cyclopedia.

Procedure[edit | edit source]

  1. Strain the oyster liquor through a sieve, and put it in a saucepan.
  2. Add the oysters, spices, salt, and cider vinegar.
  3. Place them over a slow fire, and as soon as they boil remove them from the heat.
  4. Pour the oysters into a large bowl, and let cool.
  5. When cooled, cover and store the oysters.
