Procedure[edit | edit source]

  1. Boil the potatoes until almost done. Drain.
  2. If desired, dip the potatoes in flour, then egg yolks, then breadcrumbs.
  3. Heat the drippings in a pan. Add the potatoes, and fry until brown and crisp, shaking regularly to prevent burning.
  4. Remove from pan, and serve hot.
